a cura di Mario Gentilini, testi di Elisa Penna, impaginazione di Ercole Arseni, Franco Lostaffa hard cover According to a report in "Il Corriere della Sera" dated 21 April 2012, some of the recipes were selected and rewritten by Luisa Ribolzi (1944-2023), who later became a university lecturer. "I drew on my mother’s recipe book and the Mondadori encyclopaedia" There were two guidelines: "They had to be easy recipes for children aged 8 to 10. So lots of spoon desserts, with fruit... And then simple language". In the blog "https://www.fragoleamerenda.it/ricetta/ultimora-scoperta-dopo-40-anni-la-vera-identita-di-nonna-papera/" there are additional details: "When I arrived – as I was the youngest in the group – Elisa Penna had already mapped out the structure of the Manual based on its historical development, which was one of the keys to its success. Most of the recipes were already there, and I think she was the one who had chosen them. I was asked to select the ones that were missing and to simplify the others, so that 10- to 12-year-olds would find them appealing”
